IntroductionLow carb, low cal meatloaf! Low carb, low cal meatloaf!
2 pounds extra-lean ground beef
5 slices of lite bread (35 calorie a slice) made into crumbs.
4 tablespoons of low carb ketchup (Heinz 1 carb)
1 cup of unsweetened applesauce
1/2 cup chopped onions
1/2 cup chopped green peppers
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon salt (or salt substitute)
1 tablespoon black pepper
Place ground beef in a large bowl. Add egg, applesauce, the chopped onions and peppers, the shredded bread (place slices of bread in food processor first to make fresh crumbs if you wish), ketchup, and seasonings.
Form into oval shape in a 13"x9" cake pan. Cover loosely with foil.
Makes 13 three oz. servings
