Spaghetti Casserole

Ingredients

    6 oz uncooked multi-grain spaghetti
    1 TBSP olive spread
    1/3 C shredded Parmasean cheese (low fat)
    1 (26 oz) jar meatless spaghetti sauce
    l lb. 93% lean ground beef
    1 can Rotel
    2 C chopped green pepper (optional)
    1 (14.5 oz) can diced tomatoes, drained
    8 oz. FF cottage cheese
    1 C chopped mushrooms
    1 small onion
    1 C shredded part-skim mozzarella cheese
    3 cloves garlic, minced
    1 TBSP basil
    1/2 tsp dried oregano

Tips

Make ahead and freeze or refrigerate, thaw before cooking.


Directions

1. Cook spaghetti according to directions, drain and pour into bowl. Add olive oil and Parmasean cheese, toss to coat.
2. Brown ground beef, onion , garlic, mushrooms and peppers. Drain excess fat.
3. Add spaghetti sauce, tomatoes, rotel and seasonings. Heat throughout.
4. Stir in cottage cheese and cooked spaghetti. Add 1/2 cup shredded mozzarella cheese.
5. Spray 13 x 9 x 2 baking dish with PAM and pour mixture into dish. Sprinkle with remaining 1/2 cup mozzarella cheese.
6. Cover and bake 350 for 40 minutes.
