Number of Servings: 30

Ingredients

    2 C old-fashioned oats
    1 C dried cranberries
    1 C chopped toasted walnuts
    1.5 C mashed very ripe bananas (about 3 medium)
    1/6 C unsweetened applesauce
    1/6 C vegetable oil
    2 tsp vanilla extract
    1 1/4 tsp ground cinnamon
    1/2 tsp fine sea salt
    1/2 tsp baking soda

Tips

I found that these cookies didn't spread when baking. We liked them as dough balls but if you want a flat cookie, just form them that way before baking.


Directions

1. In a large bowl, combine the oats, cranberries and walnuts.
2. In a medium bowl, combine the remaining ingredients until well blended.
3. Add banana mixture to the oatmeal mixture, stirring to combine. Let stand for 15 minutes.
4. Preheat oven to 350. Lightly spray cookie sheets or use parchment paper. Drop cookies by rounded tablespoons (dough is wet, so I found it easier to just make balls in my hand) onto cookie sheet.
5. Bake 14-15 mins or until lightly browned. Cool 1 minute then transfer to wire rack to cool completely. Store for 3 days at room temp or freeze. Enjoy!
