Curry Chicken with potatoes

Number of Servings: 6

Ingredients

    1-lb boneless skinless chicken breast- diced in 1 inch cubes (approx 3)
    1- Cup diced celery- about 2 stalks
    3- carrots diced
    1/2 - Cup medium onion diced
    2- med red potatoes diced 1 inch cubes
    3-4 TBSP flour
    3-4 Cups chicken broth
    2 tsp yellow curry powder
    salt and pepper

    **Serve with rice- not included in nutritional info**

Tips

can garnish with chopped cilantro for a fresh finish


Directions

-cook red potatoes in a small pot of salted water until fork tender
-in a large skillet over medium heat cook carrots, celery and onion with 1 TBSP of oil until soft, approx 5 minutes. Add chicken breast season with salt and pepper, cook chicken breast until no longer pink approx 8 minutes. Add remaining TBSP of oil- sprinkle flour over chicken and veggies cook about 2 minutes- add chicken broth and bring to boil- cook until sauce thickens about 5 minutes- stir in curry powder (can add more or less to taste) serve over cooked rice- enjoy!
