Ingredients

2 cups chopped onion
1 cup slice carrot
1/2 cup sliced celery
12 medium cloves garlic, crushed
2 T olive oil
2 cups cooked garbanzo beans, drained and rinsed
salt and pepper to taste
Finely chopped chives or parsley, optional
Tips
Directions
Saute onion, carrot, celery, & garlice in olive oil for 3 to 4 minutes. Add chicken broth and cooked beans; heat to boiling. Reduce heat and simmer until veggies are tender, about 5-8 minutes. Process soup in food processor or immersion blender until smooth. Add parsley or chives as garnish to bowl.
