Home Style Oven Baked Roast Potato

Introduction

I find this to be lighter than the pre boiled and deep fried version of roast potatoes, and if cooked med-high in the oven with 1 to 1.5 inch pieces it cookes nicely if turned in the oven 2 to 3 times during cooking. It can also be done on a bbq or on a rack to drain the excess oil while cooking. Once the potatoes have been smothered in oil the excess will drip off but they will still be nice and crisp and brown. Ingredients

    1 large potato peeled and patted dry
    2 Tbsp Olive Oil
    1/4 tsp dried rosemary
    1/4 tsp dried oregano
    1.4 tsp sea salt

Tips

You may have to experiment with your oven a little to get the right temperature to cook just right, but once you have mastered this you can have healthy roast potatoes or wedges without the gilt of the fat. You can even try oven baked chips this way although I must say I have never tried that. Any combination of herbs or spices can be added for flavour.

Directions

Mix the olive oil, dried herbs, and salt in a small bowl. Peel the potato and cut into 1 to 1.5 inch pieces and pat dry with a towel. With a spoon toss the potato pieces into the oil mix turning until totally coated. Place oiled potato pieces on an oven rack and cook at 180-200 'C for about 30 minutes or until golden brown. To check if the inside of the potato is cooked stab with a wooden skewer, if it comes out smoothly it is cooked. If the potato is browning too quickly before the inside is cooked decrease the oven temperature 10-20 degrees and test again in 5-10 minutes.

Serving Size: 1 large potato will make 2-4 roast pieces (serving 1-2 people)
