Fish Tacos

Introduction

Number of Servings: 10

Ingredients

    3 Tilapia filets
    1/2 package taco seasoning
    1/4 cup lime juice
    2 cups chopped tomato
    1/2 cup chopped onion
    1/2 cup chopped pablano pepper
    3 cups plain coleslaw
    2 cups lettuce
    2 1/4 cups light shredded three-cheese blend
    10 T light mayo
    10 t Tobasco (chipotle flavor)
    1 T chopped cilantro
    10 whole wheat tortillas
    2 T water

Tips

for the sauce, you can sub fat-free yogurt for the mayo (water won't be necessary in this case). add some cayenne pepper to the fish mixture if u like it spicy.


Directions

1- cut the fish into small cubes and marinade in half the spices and half the lime juice for at least one hour in the fridge.
2- in a wok or large skillet heat the olive oil, add onions, cilantro, and pablano peppers and saute for 2 minutes.
3- on medium-high heat, add fish and saute for 5 minutes or until fish starts to break apart.
4- add the tomatoes and the rest of the spices and lime juice and stir until all ingredients are combined.
5- add the coleslaw and stir until it turns slightly yellow.
6- warm the tortillas for 1 minute in the microwave (put a paper town under them and another over them)
7- in a bowl, mix mayonnaise with the tobasco and water until completely combined.
8- scoop 1/4 cup of fish and veggie mix into each taco, topping it with 1/8 cup cheese and 1/5 cup lettuce, then drizzle about 1 T of the chipotle mayo on top.

Serving Size: makes 10 tacos (stuffing is about 1/4 cup per taco)
