Chicken Cacciatore

Introduction

Crock Pot Meal Crock Pot Meal
Number of Servings: 4

Ingredients

    1 cup canned diced tomatoes
    1 cup onions, diced
    1/4 cup garlic, minced
    5 basil leaves, chopped
    5 oregano leaves,chopped
    1/2 cup red bell pepper, diced
    1 pound skinless chicken breasts
    1 cup mushrooms, sliced
    2 ounces white wine

Directions

Add all ingredients to the crockpot, except for mushrooms. Cook on low for 8 hours or until chicken shreds. The last 15 minutes of cooking, remove chicken, shred and add back to the pot. Add sliced mushrooms. If you would like to thicken the sauce, you can slurry in 2 Tbsp. flour, but this will add calories. Serve with hot pasta!

  • This was okay, but we prefer more of a spaghetti-type sauce. I might make it again...but only when I've gone over on my calories that week and need something to "cover" them. - 1/28/08
