Spicy Sweet Potato Hummus

Number of Servings: 10

Ingredients

    2 large sweet potatoes or 2 cups mashed
    3 garlic cloves
    1 15-oz can chickpeas, rinsed and drained
    1/4 cup tahini
    Juice of 1 lemon
    2 tbsp olive oil
    2 tbsp brown sugar
    1 tbsp ground cumin
    1 tsp cinnamon
    1/4 tsp cayenne pepper or more to taste
    1/2 tsp salt

Tips


Directions

Preheat oven to 400 degrees. Wrap each sweet potato with foil. Bake for 45 minutes or till tender. Peel sweet potatoes and set aside.

In a large food processor or blender, puree the garlic and chickpeas. Add the tahini, lemon juice, olive oil, brown sugar and spices. Puree until smooth. Then add the sweet potatoes and puree until combined thoroughly.

Serve with pita chips or vegetable sticks. Can be frozen for up to 3 months.

Serving Size: Makes twelve 1/4 cup servings.
