Introduction

This is very yummy and gives you the protien,caciumand some carbs. Add a piece of whole grain bread and it will start off your day with a Bang! This is very yummy and gives you the protien,caciumand some carbs. Add a piece of whole grain bread and it will start off your day with a Bang!
Number of Servings: 1

Ingredients

    !/4 tsp saffower oil with oleic

    2 large fresh eggs

    1/2 cup fresh spinach (I cut off the stems and leave the leaves whole)

    1/4 cup shredded cheese

Directions

use spray oil if you have it or lighly smear the 1/4 safflower oil in a 8 " non stick pan. Heat on med.
Whip eggs in a bowl with a bit of hot water, pour into preheated pan.
Layer spinach leaves and then shredded cheddar.
Cover and cokk about5 min. Watch carefully!
I just slide the omelet open face onto my plate and eat it with a slight bit of pepper or cayanne. The half tomato is sliced and set on the side of the dish for looks andnutrition
