Slow cooker black bean and beef chili

Introduction

This version is my red chili with a smokey sweet flavor from the chipotle and five spice (my secret is out!) This version is my red chili with a smokey sweet flavor from the chipotle and five spice (my secret is out!)
Number of Servings: 12

Ingredients

    1.5 lb ground beef
    1 onion, chopped
    2-3 cloves garlic, minced
    2-3 cups chopped butternut squash
    2 can fire roasted tomatoes
    1 can fire roasted tomatoes with chipotle
    2 cans black beans
    3 tsp chili powder
    1 tsp Chinese five spice powder

Tips

The butternut squash adds sweetness too, along with sneaky veggies and thickens sauce. Add another can of chipotle tomatoes instead of the plain for more heat. For less heat, go with 2 can of plain tomatoes with Mrs Dash chipotle seasoning instead. I serve on macaroni with some cheese on top (not included in calorie count)


Directions

Brown the beef with onions and garlic.
Meanwhile, either boil the squash or microwave until you can mash it (if microwaving, add a little water).

In a slow cooker, add browned beef, onions, garlic, mashed butternut, beans, tomatoes, spices.

Cook on high for 4 hours, low for 8 hours




Serving Size: Makes 12 1- cup servings ish.
