My own version My own version
Number of Servings: 1

Ingredients

    60gms sliced zucchini
    15gms finely diced red onion
    40gms chopped tomato
    2 torn Basil leaves (or 1 tsp dried basil)
    1 tsp fresh Thyme
    1/2 clove crushed garlic
    Ground black pepper
    1 tsp/spray olive oil (for pan)

Directions

1. Spray pan with olive oil.
2. Add in onion and cook until softened. Add in garlic.
3. Add in other ingredients. Cook until zucchini is softened, but still has some crunch.
4. Serve

Serving Size: Makes around 115gms Veggie serve
