I tried making this using breasts only as it is difficult to figure out portion sizes using a whole chicken. I only eat the breast when I make this anyway. Ingredients

Chicken Breast, no skin, 4 (each 4 oz raw, no skin) *Flour, white, .5 cup
Olive Oil, .25 cup
Green Peppers (bell peppers), 1 cup, strips
Onions, raw, 2 medium (2-1/2" dia)
Del Monte Diced Tomatoes, No Salt Added, 1.5 cup
Tomato Sauce, 1 cup
Mushrooms, fresh, 1 cup, pieces or slices
Oregano, ground or leaves, 1 tsp
Basil, 1/2 tsp ground or leaves
Salt, .5 tsp
Garlic, 2 clove chopped finely
Tips
May sprinkle with Parmesan cheese if desired, but add that to the calorie count seperately.
Directions
Heat oil in large skillet. Brown chicken, coated with the flour, until lightly browned on all sides. It does not have to be totally cooked through as it will finish while all ingredients are cooking.
Add the all the other ingredients to the skillet; cover and cook on medium heat untll bubbling. Turn down to simmer, and cook until meat is cooked through.
