Some Like it HOT Chili

Introduction

My husband likes it hot ... so I adapted an old chili recipe by adding HOT green chiles, more chili powder, and increased the fiber of this dish by adding 2 more cans of beans. This is a very flavoful dish, great with a salad (or on top of one), and can be served with cheese and onions. A dollop of fat free sour cream will tame it (a bit). Ingredients

    16 oz extra lean ground beef, raw
    1 cup chopped onion
    2 cloves garlic, minced
    1 cup celery, diced
    3 Tbsp chili powder
    1 tsp salt
    1 tsp sugar
    2 cans Hatch HOT green chile
    16oz can kidney beans, rinsed & drained
    2 16oz cans pinto beans, rinsed & drained

Tips

If you don't like it this hot, use mild chiles, or omit completely.

You can stretch the recipe by adding more beans, which will reduce the fat and increase the fiber.

I usually double this recipe and freeze some for later.


Directions

Cook hamburger, onion and garlic in large pot until hamburger is browned. Rinse with water and drain. Stir in tomatoes (with liquid), celery, chili powder, salt, sugar, and chiles. Heat to boiling; reduce heat. Cover and simmer 1 hour.

Stir in beans. Heat to boiling; reduce heat. Simmer uncovered until hot, about 15 minutes.

Serving Size: 6 ~2cup servings
