Barley "Tabouleh"

Introduction

I had about 1/3 cup barley sitting around, as well as parsley that needed to be used up. I had about 1/3 cup barley sitting around, as well as parsley that needed to be used up.
Number of Servings: 5

Ingredients

    1-1/3 cups cooked barley
    2 tsp extra virgin olive oil
    2 tsp lemon juice
    1/2 tsp salt
    6 Tbsp. finely minced onions
    6 Tbsp. finely chopped tomatoes
    6 Tbsp finely minced parsley

Directions

Mix all ingredients. Refrigerate for several hours before serving.

Serving Size: Makes 5 1/2 cup servings
