Spinach, fresh, 1 package (10 oz)
*Extra Virgin Olive Oil, 1 tsp
Capers, canned, 2 tbsp, drained
It's surprising how a huge bag of spinach makes what seems to be a small serving.
While it's microwaving, preheat skillet and use 1 tsp olive oil
When the skillet is really hot, add capers (skillet should sizzle)
Add the spinach
Saute for a minutes and serve
Serving Size: Makes 2 servings of 5 ounces of spinach each
