Roasted Rosemary Potatoes and Butternut Squash

Introduction

Ingredients

    2 cups butternut squash, peeled and cubed (1/2" cubes)
    2 cups red potatoes, cubed (1/2" cubes)
    1 TBSP olive oil
    1 TBSP dried crushed rosemary (or chopped fresh)
    1 tsp garlic powder (or 2-3 cloves fresh minced)
    1 tsp salt
    1 tsp pepper

Tips

variation: add one shallot, sliced


Directions

place all ingredients in a large ziplock bag and shake gently till coated. spread out evenly on a cookie sheet covered in foil. Bake at 400 degrees for 30 minutes.

Serving Size: makes 6 - 2/3c servings
