    4 tablespoons olive oil
    1/4 cup chopped celery
    3/4 cup chopped onion
    1/2 cup chopped carrots
    1/4 cup chopped cabbage
    1 cup mushrooms. sliced
    1/2 cup zucchini sliced
    1 1/2 cups stewed tomatoes
    1/2 cup tomato paste
    1 1/2 cup cubed potatoes
    1 quart chicken broth
    2 cloves garlic minced
    2 tablespoons droed parsley

    Heat olive oil. Saute onion, carrots, celery. Until onions are clear. Add everything else.Bring to a boil. Cover and reduce heat and simmer 1 hour.
