Number of Servings: 10

Ingredients

2 20 oz packages Jenni O lean ground turkey
    1/2 onion chopped
    1/2 c egg beaters
    1/2 cup ketchup
    1/4 cup barbecue sauce
1/2 cup dried bread crumbs (I use 2 slices light bread to get the 1/2 cup)
    1 Tbsp dijon mustard
    1/4 tsp salt
    1/4 tsp pepper

Directions

Combine ketchup and bbq sauce.

Spray the bottom of the crock pot with non stick cooking spray. In a bowl, combine the ground turkey, onion, egg beaters, 1/4 cup of ketchup/bbq sauce mixture, bread crumbs, mustard, salt, and pepper. Mix well.

Shape into rectangular loaf and transfer to crock pot.

Spread the remaining ketchup/bbq sauce over the top.

Cook on low 6-8 hours or on high for 4 hours.

  • This turned out so good! I think next time I'll mix in some bell pepper diced up. I added red pepper flakes to it to give it a little spice. I froze half and the other half I put in serving sized containers for lunches this week. I'm the only meat eater, so I like to do batch cooking of meat for me. - 11/18/13
