Introduction

Number of Servings: 1

Ingredients

    Olive oil 0.25c
    2 pounds tomatoes, chopped
    1 large onion
    3 or more garlic cloves
    4 c chicken broth
    1/4 pound or approx 4 slices day-old bread, cubed

Tips

Great with a fresh grated hard cheese, or a little olive oil sprinkled prior to serving.


Directions

Heat oil, sauté onions, then garlic approx 6 min. Add tomatoes, and bring to boil. Add remaining ingredients (except basil) and simmer, breaking the bread up with a spoon until you have a mush. Add water or more bread as needed. Stir in basil in last 5 minutes.
