Jamie's Chicken Pot Pie

Introduction

Number of Servings: 4

Ingredients

    2 chicken breasts, cooked and chopped
    sliced scallions (2) and mushrooms (6 crimini)
    pat of butter
    1 cup chicken broth
    4 Tbs cottage cheese
    1 Tbs flour
    2 tsp mustard
    fresh thyme
    puff pastry, thawed and rolled to top
    1 egg, whisked

Directions

Saute mushrooms and scallions in butter. Toss with 1Tbs flour, mustard and cottage cheese. Cook for a bit. Add chicken and broth and simmer to heat through. Would recommend adding peas to this as well.

Transfere to pie plate, top with pastry and brush with egg. Bake at 400F for 15 minutes to brown.
