Key Lime Protein Bars

Introduction

Number of Servings: 16

Ingredients

    1 whole egg
    2 egg whites
    8 oz fat-free cream cheese, softened
    1/2 c instant non-fat dry milk
    1 tsp grated fresh lime zest(entire lime)...(add the zest of a whole lemon to give a strong citrus flavor)
    2 Tbsp fresh lime juice
    1/4 c unsweetened almond milk (or skim or 1%)
    3/4 c low-carb, low-cal, low-fat vanilla protein powder
    3/4 c Stevia (or use 1/4 c agave nectar)
    2 Tbsp reduced-fat unsweetened shredded coconut
    1 Tbsp cornstarch or other thickener

Directions

1. Preheat oven to 350.
2. Whisk egg and egg whites in small bowl.
3. Comvine cream cheese and all remaining ingredients with a blender.
4. Once smooth, add eggs and blend until thoroughly mixed.
5. Coat an 8x8 cooking pan with spray.
6. Pour in batter.
7. Bake for 30-35 minutes or until toothpick comes out clean when poked in the center. Cut into 16 squares.
