Vegan Caramellized Leek Soup

Introduction

A twist on one of my favorite recipes! Tastes a lot like French Onion soup. A twist on one of my favorite recipes! Tastes a lot like French Onion soup.
Number of Servings: 4

Ingredients

    2 leeks, finely sliced
    3.5 cups low-salt veggie stock
    1/4 cup vermouth
    3 T olive oil
    1 1/4 t sugar

Tips

Absolutely delicious with a slice of French bread and some grated mozzarella on top! Not included in calories.


Directions

1. Combine leeks and olive oil in a large soup pot. Simmer on moderately low heat until leaks are wilted, about 40 minutes.

2. Sprinkle sugar over leeks. Stir well, simmer about 10 minutes.

3. Add vermouth and stir well. Simmer until liquid is fully evaporated, about 10-15 minutes.

4. Deglaze with 1/2 cup veggie stock. Simmer until liquid is fully evaporated, about 20 minutes. Leeks should be golden.

5. Add the rest of the veggie stock and bring just to a boil. Serve warm and enjoy!

Serving Size: Makes 4 servings of about 1 cup each
