Simple, Delicious Tomato Sauce

Introduction

A simple, delicious and fresh tomato sauce. I don't like tomatoes, marinara or tomato sauce of any kind but I can't get enough of this!! A simple, delicious and fresh tomato sauce. I don't like tomatoes, marinara or tomato sauce of any kind but I can't get enough of this!!
Number of Servings: 6

Ingredients

    6 Roma Tomatoes
    1 Shallot
    6 Cloves of Garlic
    I small can of Tomato Paste
    2 tbsp. (approx) of Olive Oil
    Half a bunch of Parsley

Tips

-Butter can be used in place of olive oil.
-2 cans of stewed tomatoes can replace the 6 Romas


Directions

1. Cut X's onto the bottoms of the Roma Tomatoes. Then place into a pot of boiling water. Remove when skin starts to peel or get 'wrinkly'. Then peel off the skin and remove the 'end'.
2. Chop tomatoes and mince the shallot and garlic.
3. Saute the shallot and garlic in oil.
4. Add tomatoes.
5. Add paste and reduce until the liquid is mostly gone (sauce-like consistency).
6. Add parsley and salt and pepper to taste (add liberally).
7. Bon Apetite!

Serving Size: Makes approx. 6 1/2-cup servings
