Introductionneed 4 wooden skewers too need 4 wooden skewers too
I used small skinless thighs for this recipe, but breasts will work too. (3oz breasts with no skin or bones)
4-3oz. Chicken Breast, no skin, boneless
1 red pepper, cut into square pieces
1 green pepper, cut into square pieces
1 large slice (1/4" thick) onion
4 Mushrooms (portobella preferred)
1/2 tsp salt
1 tsp black pepper
1 tsp garlic powder
Soak the skewers for about 10 minutes to keep them from burning.
Meanwhile cut the chicken into 1 1/2"-2" cubes. Cut the peppers into square pieces roughly the same size as the chicken pieces. Quarter the slice of onion.
Divide the peppers, and onion into 4 groups. Divide the chicken evenly between the 4 groups. Put a mushroom in each group.
Add peppers, onions and chicken from one of the groups onto the first skewer. Top with a mushroom.
When all 4 skewers are full, season with salt, pepper and garlic powder. Grill until chicken is cooked through.
