    6 cups vegetable broth
    3 shallots, finely chopped
    1.5 pounds mushrooms, sliced thick
    1 medium carrot, diced
    2 stalks celery, diced
    .5 cup pearled barley, raw
    .5 tsp. dried thyme
    salt and pepper to taste

Directions

Chop and dice vegetables. Put all ingredients in a slow cooker and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
