Tortilla-Less Enchilladas

Ingredients

    1 Large can of tomatos
    1 cup of fat free plain yogurt
    3 chicken breasts
    1 onion diced
    3 tbsp fresh garlic minced
    1-2 tbsp extra virgin olive oil
    1/4 cup sliced black olives
    2 tbsp of chilli powder
    1tsp of dark cocoa

Directions

Heat oil in a large frying pan, add onion and garlic, cook until soft. while onions are cooking cut chicken into large pieces about 2" by 2". Add them to the pan with the onions and garlic. Cook until chicken is no longer pink on the inside. Add tomatos, salsa, olives, chilli powder and cocoa. Stir until all ingredients are combined then transfer to a baking pan. Spoon yogurt on to the top blending only slightly. Put the dish into an oven preheated to 350 degrees celcius. Bake for 15 minutes and serve over brown rice.
Optional- garnish with a little greated light cheese or a dollop of yogurt and green onions
