Refried Beans

Number of Servings: 4

Ingredients

    3 slices bacon, coarsely chopped
    2 tbsp. water
    1/2 onion, chopped
    3 garlic cloves, minced
    2 cans (15 oz. each) pinto beans, rinsed and drained
    3/4 C. chicken broth

Directions

In a skillet, cook bacon with water over medium heat until browned. With slotted spoon, transfer bacon to paper towels on a plate to drain. Add onion and garlic to drippings in skillet; cook, stirring frequently, until onion is tender. Add beans and 1/4 C. broth. With potato masher or wooden spoon, mash beans. Continue cooking beans until liquid has been absorbed, about 3 minutes. Add 1/4 C. broth and stir until beans are piping hot and almost all liquid has been absorbed. Add remaining broth and heat until boiling. Spoon onto a plate and garnish with bacon.

Serving Size: makes 4 servings
