Yummy Vegetable Soup

Introduction

3 1/4 servings of vegetables in 11/2 cups of soup. 3 1/4 servings of vegetables in 11/2 cups of soup.
Number of Servings: 8

Ingredients

    4 cups canned tomatoes with juice
    31/2 cups canned beef broth
    4 cups chopped cabbage
    2 cups chopped celery
    2 cups chopped carrots
    1 cup chopped onion
    Cooking spray

Directions

Lightly spray a large sauce pan with cooking spray and saute carrots, onion and celery until they are slightly softened. Add tomatoes with juice, cabbage and beef broth. Bring to a boil, lower heat and simmer for 2 hours.

Makes 8-1 1/2 Cup Servings
