southwest tuna mix

an interesting variation on tuna filling for wraps, salads and sandwiches an interesting variation on tuna filling for wraps, salads and sandwichesNumber of Servings: 12
Ingredients
-
2 cans water-packed tuna, drained
1/2 cup greek yogurt
1 sweet pepper, seeded and chopped
2 large hard boiled eggs, chopped
1/2 cup salsa
3 green onions, chopped
3 Tbsp fresh cilantro, minced
1/2 Tbsp black pepper
1 Tbsp garlic powder
6 inner leaves romaine, shredded
Tips
This is a clean eating recipe. Add more salsa if you prefer more spice, and a tsp of chili powder will kick it up a notch in heat. I make six 7 inch tortillas and refrigerate the rest for filling for pitas, salad toppings and sandwiches.
Directions
mix all ingredients except shredded lettuce in medium bowl. Use your preferred tortilla ( I use 100% whole wheat ones, 7 inch, 100 cal each) and place lettuce(approx 1/4 cup) in first, then top with 1/4 cup tuna mix. Fold and enjoy!
