Jambalaya in the Crock Pot
Submitted by: NJEANANumber of Servings: 6
Ingredients
-
1 lb Boneless Skinless Chicken Breast
1 lb Smoked Turkey Sausage, sliced
1 large Onion, Chopped
2 or 3 Celery Ribs, sliced
4 Garlic Cloves
1 (14 oz.) Can Whole Tomatoes
1/3 cup Tomato Paste
1 (10 1/2 oz) Cans Beef Broth
1 T Dried Parsley
1 1/2 tsp. Basil
1/2 tsp. Oregano
1 tsp. Tabasco Sauce
1/2 tsp. Salt
3 Cups Cooked Rice
Tips
Directions
Cut chicken into 1 inch pieces and add to crockpot. (or put individual frozen chicken breasts in crockpot and break up into smaller pieces just before adding rice.)
For added flavor saute veggies in a little oil (I prefer garlic flavored grapeseed oil) until slightly browned, then add to chicken in crockpot. Then add the other ingredients except the rice. (or if pressed for time just put all the ingredients except rice in the crockpot without sauteing)
Cover and cook on low for 8 hours.
Stir in rice before serving.
Serving Size: Makes 6 hearty servings
