Apple & Orange Salad with Cranberry Yogurt Sauce

Introduction

Number of Servings: 8

Ingredients

    ~4 medium apples (mix up types for different flavors if you desire)
    ~2 large oranges
    ~1 cup whole fresh cranberries
    ~1/3 cup water
    ~2 Tablespoons sugar
    ~1/2 cup plain Greek yogurt

Directions

Combine cranberries, water and sugar in a small sauce pan. Bring to a low boil then reduce heat and simmer for 10 minutes, using a fork stir occasionally and break up berries. Meanwhile, dice the apples and oranges and place in a bowl. Once the cranberry sauce is finished, allow it to cool. After it cools, add in the Greek yogurt and pour over the fruit. Toss to coat evenly and enjoy.

Serving Size: makes approximately 8 servings of 1/2 cup
