This is a good white sauce to use in place of Cream of Mushroom or chicken or just when you need a white sauce. It is healthier for you because it doesn't have all of the preservatives and it is cheaper. Ingredients

    2 Tbsp butter
    2 Tbsp flour
    2 cups 1% milk (or 2% or whole) - nutrition figured with 1%

Directions

1. Melt butter in skillet.
2. Whisk 2 tbsp flour in with butter.
3. Add milk to butter/flour mixture and whisk. Make sure to mix thoroughly.
4. Cook on medium high heat for 5 - 6 minutes, stirring often. Sauce will thicken. If sauce is too thin, whisk in more flour. If sauce is too thick, whisk in more milk.
5. To make cream of mushroom, add chopped mushrooms. To make cream of chicken, add 3 - 4 tbsp chicken stock or 2 tsp chicken bouillon.
