Granola Bars (from Super Baby Food by Ruth Yaron)

Introduction

These are a meal replacement bar. Very hearty! These are a meal replacement bar. Very hearty!
Number of Servings: 8

Ingredients

    1 1/2 cups rolled oats
    1/4 cup wheat germ
    1/4 cup ground nuts or nut flour
    1/4 cup nonfat dry milk
    1/2 cup dried fruit
    1/4 tsp cinnamon
    1 egg beaten
    1/4 cup melted butter or oil (I use coconut)
    5 Tbs. honey (1/4 cup + 1 Tbs.)
    1/4 tsp. vanilla
    1 Tbs. flax seeds (grind them if you like)

Tips

Toasting the oats, wheat germ and flax seeds for additional flavor and crunch! These bars can easily be cut into smaller portions if you do not want to use them as a meal replacement.

Directions

Preheat oven to 350 F. Mix all dry ingredients. Mix wet ingredients in separate bowl. Add wet to dry and mix. If it's too dry, add more honey. If it's too wet, add more oats. Press into 8x8 pan. Cook 20 minutes. Cool and cut into bars.
