Karen's Rojo and Verde Chicken

Introduction

A delicious recipe given to me by my friend from Puerto Rico! A delicious recipe given to me by my friend from Puerto Rico!
Number of Servings: 6

Ingredients

    3 lbs chicken breasts with bones or 1 lb of boneless
    3 tbsp Goya Recaito Cooking Base
    3 tbsp Goya Sofrito Cooking Base
    1 lg onion, sliced
    1 cup carrots
    1 1/2 lg red potatoes, sliced
    1 small Yuca (optional - it's like a potato, but a super food)
    1 cup water
    1 can red kidney beans (don't use uncooked kidney beans)
    1/2 packet of Goya ham boullion
    1 packet of Goya sazon

Directions

You can mix everything in one dish and let marinade overnight. Or, mix and cook immediately. Bake at 375 for 45-60 minutes.
