Ingredients

Peppers, sweet, red, fresh, 1 medium
Sweet peppers (bell), 2 medium
Peanuts, dry-roasted, 1 oz. Coarsely chopped
Olive Oil, 1 1tsp
Cumin seed, 1 tsp
Chili powder, .5 tsp
*Coriander seed, powdered, 1 tsp
Turmeric, ground, .15 tsp
Salt, to taste.
Tips
Directions
Dice peppers into cubes. Heat a heavy bottomed pan and add oil. Sprinkle cumin seeds, when the oil is hot. Stir in all the powders, followed by peppers. Cook on high heat for 30 seconds to a minute. Reduce heat and cook till peppers are soft but, crunchy. Stir in coarsely chopped peanuts. Serve hot.
