Introduction

This makes a good side dish with sweet and sour taste of red pepeprs. If you prefer no sweet and sour taste, use only green peppers. Adjsut spices to your taste. Ingredients

    Peppers, sweet, red, fresh, 1 medium
    Sweet peppers (bell), 2 medium
    Peanuts, dry-roasted, 1 oz. Coarsely chopped
    Olive Oil, 1 1tsp
    Cumin seed, 1 tsp
    Chili powder, .5 tsp
    *Coriander seed, powdered, 1 tsp
    Turmeric, ground, .15 tsp
    Salt, to taste.

Directions

Dice peppers into cubes. Heat a heavy bottomed pan and add oil. Sprinkle cumin seeds, when the oil is hot. Stir in all the powders, followed by peppers. Cook on high heat for 30 seconds to a minute. Reduce heat and cook till peppers are soft but, crunchy. Stir in coarsely chopped peanuts. Serve hot.
