Terrific Tacos (Deliciously Vegetarian)

Introduction

My kids just love these! Great way to feed them broccoli, cauliflower and carrots! My kids just love these! Great way to feed them broccoli, cauliflower and carrots!
Number of Servings: 7

Ingredients

    12 taco shells or tortillas
    3 tbsp olive oil
    1 lg yellow onion chopped
    1-2 heads broccoli
    1 med. head cauliflower
    3 carrots chopped
    1 (15-ounce) can tomato sauce
    1 (4-ounce) can diced green chilies
    2 tsp cumin seed
    1 tsp oregano
    1 tsp garlic salt
    salt to taste
    1 c water (optional)

Directions

1. In a large pan, saute' the onions in oil until soft.

2. Mix in the other ingredients; add the water if the mixture becomes too thick or starts to stick. Cook until the vegetables are tender (about 10 minutes).

3. Spoon the filling into warm soft or hard shells. Top with a sprinkling of grated mozarella. Serve.

  • Yum! My husband, who eats meat, and I both LOVED this recipe. We used warmed whole-wheat tortillas to make the tacos. This recipe makes A TON of food, so if you have a small family, plan on left overs or cut down the recipe. We will definitely have these again! - 2/11/08
