Italian spinach mushroom quiche

Ingredients


    Egg, fresh, 5 large (remove)
    egg white, fresh, 1 large (remove)
    *Trader Joe's Tomato Basil Marinara, 0.25 cup (remove)
    Parmesan Cheese, grated, .25 cup (remove)
    *Lorraine Swiss Cheese, Reduced Fat, 3 oz (remove)
    Feta Cheese, .33 cup, crumbled (remove)
    Milk, nonfat, .5 cup (remove)
    *Spinach, cooked, 1 cup (remove)
    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    *Peppers, sweet, red, fresh, 1 ring (3" dia, 1/4" thick) (remove)
    Garlic, 2 clove (remove)
    Olive Oil, 2 1tsp (remove)
    Oregano, ground, 1 tsp (remove)
    Nutmeg

Directions

beat eggs and milk, add feta and nutmeg. Saute garlic mushrooms and spinach in olive oil, add to egg mixture. Spread marinara on bottom of 9X9" baking dish (first spray with olive oil misto or PAM type cooking spray), sprinkle parmesan, then spread egg/veggie mixture. Top with Swiss lorraine cheese. Bake at 350 for 50-60 min.
Can switch up cheese, use mozzarella or jack instead of swiss and add tomato on top then layer cheese on top of tomato. Good with a salad for dinner or some fruit for breakfast or cold for lunch.
