Blueberry Flaxseed Scones

Ingredients

    1 3/4 cup flour (white whole wheat)
    3 tbsp sugar
    2.5 tsp baking powder
    .5 tsp salt
    .33 cup firm butter
    1.5 tsp egg replacer
    2 tbsp water
    .5 tsp vanilla extract
    6 to 8 tbsp vanilla soy milk
    2.33 tbsp flaxseed meal
    .33 cup dried blueberries

Directions

heat oven to 400F

mix flour, sugar, baking powder, and salt in a bowl. cut in butter. stir in egg replacer/water, vanilla, and enough soy milk so dough leaves side of bowl.

knead 10 times. pat into round on a baking sheet and cut into 8 pieces.

bake 14 to 16 minues or until light golden brown. remove from baking sheet and separate wedges. serve warm.
