Introduction

Good when you want a winter breakfast that will warm you and stay with you. Coconut can be cooked in or toasted and sprinkled on top. Because of the coconut oil, this recipe is high in saturated fat, so be sure to factor that in to your overall fat and cholesterol intake. Ingredients

    Ingredients:

    1 tsp coconut oil
    1 cup milk, nonfat
    1 Tbsp sweetened dried coconut
    1/3 cup of old fashioned rolled oats
    1/3 cup of minced dried figs
    Salt to taste
    1 Tbsp natural peanut butter, smooth
    1 tsp agave syrup

Tips

Note: coconut oil can also be melted in your cooking pot before adding the other ingredients to cook.


Directions

Put coconut oil in cereal bowl and heat in microwave until melted (about 20 seconds). Add to milk, oats, salt, figs and coconut to small cooking pot. Cook over medium-low heat until thickened, stirring often to prevent scorching. Pour cooked oatmeal into cereal bowl with melted coconut oil; add peanut butter and agave syrup and stir to combine. Enjoy.

Serving Size: Makes one bowl of oatmeal
