Veggie hot pot

Introduction

just a quick meal in winter using the vegetables at hand. just a quick meal in winter using the vegetables at hand.
Number of Servings: 8

Ingredients

    5 large potatoes
    5 carrots
    1 leek
    2 cups of brussels sprouts
    150 grams black lentils
    5 cloves garlic
    1 large piece of ginger root
    2 tsp salt
    1/2 tsp pepper
    1/2 tsp cumin
    100 grams tomato puree
    2 tsp soup powder

Tips

I like to eat this with toasted rye bread.


Directions

cut all veggies into small pieces. precook lentils without salt for a while, then add all the vegetables, salt and soup powder, boil until all veggies are tender and then add the pureed tomato, pepper, cumin and whatever spices you like.

Serving Size: makes 10 bowls of soup
