Vegetarian Shephard's Pie

Ingredients

    4 Medium Sized Potatos
    1/2 Cup Skim Milk
    4 tsp Blue Menu Celeb Margarine
    1/2 tsp Black Pepper
    1 Largae Onions, finely diced
    2 Medium Carrots, finely diced
    2 Medium Celery, finely diced
    1 Bay Leaf
    1 Tbsp Flour
    1 Tbsp Fresh Chives, chopped
    1 Cup Vegetable Broth
    1 Can Lentils (1.5 Cups)
    1 Close Garlic

Directions

1. Place potatoes in a large saucepan and cover with 2 inches of water. Bring to a simmer over medium-high heat, partially cover and cook until tender, 10 to 15 minutes. Drain and return the potatoes to the pot. Add milk, 2 tsp of butter, pepper and chives. Mash with a potato masher until mostly smooth.

2. While the potatoes are cooking, position rack in upper third of oven; preheat broiler.

3. Heat the remaining 2 tsp of butter in a large skillet over medium-high heat. Add onion, carrot, celery, garlic and bay leaf. Cover and cook, stirring occasionally, until softened, 5 to 7 minutes. Sprinkle with flour and stir to coat. Stir in broth. Bring to a simmer; cook, stirring, for 1 minute. Remove Bay Leaf. Stir in lentils and cook, stirring constantly, for 2 minutes.

4. Pour the Lentil mixutre into the pan. Top with the mashed potatoes. Broil, rotating halfway through, until the potato is lightly browned in spots, 6 to 10 minutes.
