Rumbamel's Chicken and Bean Red Chili

Introduction

I wanted a protein packed dinner and this turned into a hearty meal!! Yum! I wanted a protein packed dinner and this turned into a hearty meal!! Yum!
Number of Servings: 8

Ingredients

    -1 can black beans, drained and rinsed, 14 oz
    -1 can light red kidney beans, drained and rinsed, 14 oz
    -1 can chili beans, undrained (from walmart)14 oz
    -20 chopped black olives
    -3/4 C canned diced tomatoes w/green chiles
    -1 can tomato sauce, 10 oz, about 3/4 C
    -1 C frozen corn, not thawed
    -1 C chopped onions, I use white
    -1 1/2 lbs cooked (grilled) boneless skinless chicken breast, diced or chopped to your desired size
    -cumin, chili powder and cocoa powder to season

Directions

---Mix all beans, tomatoes, corn, olives, tomato sauce and seasonings in a med.- large pot over med./high heat stirring often WHILE the chicken is cooking. Set the chicken aside to rest and then grill your onion just until crisp tender or desired doneness. Put in with the bean mix and stir well.

---Chop/dice your chicken and add it to the mix, stirring well. Let simmer for about 7-10 minutes stirring often.

--Makes 8 1/2 servings of 1 C each.
