Chicken Tikka Masala

Introduction

Chicken marinated in yogurt and spices and then served in tomato cream sauce. Chicken marinated in yogurt and spices and then served in tomato cream sauce.
Number of Servings: 4

Ingredients

    Marinade:
    1 cup low fat yogurt
    1 TB lemon juice
    2 tsp ground cumin
    1 tsp cinnamon
    2 tsp cayenne pepper
    2 tsp black pepper
    1 TB minced ginger
    12 oz. boneless skinless chicken breasts

    Sauce:
    1 TB butter
    1 clove garlic, minced
    2 tsp ground cumin
    2 tsp paprika
    1 cup (8 oz.) tomato sauce
    1 cup fat free evaporated milk

Directions

1. In large bowl, combine ingredients for marinade. Stir in chicken. Refrigerate for 1 hour.
2. Cook chicken and set aside
3. Melt butter in large skillet over medium heat. Saute garlic, season with cumin and paprika. Stir in tomato sauce and fat free evaporated milk. Simmer on low heat until sauce thickens, 20 minutes. Add chicken and simmer for 10 minutes.
