Introduction

Number of Servings: 4

Ingredients

    32oz Reduced Sodium Chicken Broth
    2 cups raw carrots, chopped
    1 cup onion, chopped
    1 cup celery, chopped
    1 cup broccoli, chopped
    1 cup cauliflower, chopped
    Italian seasoning or mixed herbs (no salt)
    black pepper
    .5 cup of quinoa
    water to thin soup if required

Directions

wash all vegetables, put all ingredients in saucepan, bring to boil and simmer until carrots are tender. Add water if a thinner consistancy soup is preferred.

Serving Size: makes 4 1-cup serving
