Hermit's Slow Cooker Lasagna

A variation on several low fat/ low sodium recipes can be made in slow cooker, or cooked in the oven. Joey's is a regional sauce relatively low in sodium. Ingredients

28 oz jar Joey's Tomato Basil Italian Pasta Sauce
8 oz no salt added tomato sauce
1/2 c water
16 oz part skim ricotta cheese
2c shredded 2% milk mozzarella cheese, divided
3/4c grated parmesan cheese, divided
1/4c Egg Beaters egg substitute
2 tsp minced garlic
1 tsp Italian Seasoning
1 Tbsp dried parsley
12 oz Turkey Italian Sausage
Tips
I cooked sausage links the night before while grilling dinner.
Directions
Combine tomato sauces and water in a bowl.
In a separate bowl combine ricoota cheese, 1 1/2 c. mozzarella, 1/2 c. parmesan, egg substitute and seasonings.
Cook sausage and crumble, or cook links and cut up into small pieces.
Spray interior of slow cooker insert. Coat bottom with 1/4 of sauce mixture. Layer noodles next, breaking up as needed to cover sauce (3-4 noodles sepending on size of crock, more if using a regular lasagna pan for oven. Spread 1/3 of cheese mixture on noodles. Spread 1/3 of sausage on cheese. Repeat layers twice more, ending with last 1/4 of sauce. Cook on low 5 hours. 10 minutes prior to serving, sprinkle remaining cheeses on top and allow to melt.
