Shawn's chicken lasagna

Ingredients

    8 oz ground chicken
    3/4 cup fat free cottage cheese
    1/2 an egg
    3/4 cup mozzarella cheese
    1 cup cherry tomatoes
    1 cup fresh spinach
    2 lasagna noodles
    1/2 cup onions
    1 clove garlic
    1 cup fresh mushrooms

Directions

cut up all the vegetables, set aside. fry chicken then add all the vegetables including tomatoes and whatever spices you like. cook your noodles and start layering in small casserole dish. layer chicken mixture first, then cottage cheese, then noodles and so on...finish with mozzarella on top and bake at 350 till golden brown and bubbly.
