Baked Creamed Spinach



Introduction

I haven't found a way to lower the fat on this recipe... (what to substitute for heavy cream?) but it is still a relatively healthy dish if eaten with a lower fat meat such as chicken or fish. Number of Servings: 5

Ingredients

    1 cup heavy cream
    3 C frozen spinach, thawed and well dried
    3/4 C Shredded Mexican Cheese
    Salt to taste

Directions

Preheat oven to 370
Whip cream until stiff
Fold in 1/2 C cheese into spinach, then blend with cream
Salt to taste
Spray pan with cooking spray
Spoon in mixture
Sprinkle remaining cheese over top
Bake until browned
