Introduction

Another Sandra Lee recipe. She prepared it with the Island Chicken (which is posted). My s.o. loved it! So refreshing! I used fresh mango, but the jarred is easier if you want really fast, semi-home made.

Number of Servings: 4

Ingredients

    1/4 cup fresh lime juice
    2 tablespoons honey
    1 tablespoon red wine vinegar
    1 teaspoon bottled garlic , minced
    1/4 cup olive oil
    salt and freshly ground black pepper, to taste
    2 cups mangoes , cubed (may used frozen/defrosted or jarred)
    4 cups romaine lettuce , chopped
    1/2 seedless cucumber , cubed (approximately 1 cup)



Tips

Salt and Pepper to taste not included in nutritional information.


Directions

Whisk together juice, honey, vinegar, and garlic. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.

Toss together mangoes, romaine, and cucumber with dressing, to taste.




Serving Size: 4 servings 1.5 cups each
