Introduction

Number of Servings: 8

Ingredients

    4 C coconut milk
    4 T natural chunky peanut butter
    1 T Ground Tumeric
    2 t Red Pepper Flakes

    1 pkg. Frozen Vegetables
    1/2 C Frozen Shelled Edemame

    2 C cooked instant brown rice

    2-4 T Olive Oil
    1 pkg. firm Tofu cubed
    2 T nutritional yeast (brewer's yeast)
    1T garlic powder

    1 serving dry roasted, non-salted peanuts

Directions

Combine first 4 ingredients in medium saucepan. Bring to boil and let thicken to gravy consistency.
Boil Vegetables and Edemame according to pkg. directions. Cook brown rice. Fry Tofu until nicely brown on sides (can use seasonings such as brewer's yeast and garlic powder to flavor). In casserole dish, layer rice, vegetables and peanut sauce. Top with Tofu and shelled peanuts.

Serving Size: makes 8 2-cup servings
